Lobster Grilled with Spiced Butter

Grilled Lobster with Spiced Butter is a delectable way to prepare fresh Maine lobster.

Ingredients

  • 4 (1 ½ pound) lobsters or 4 spiny lobster tails, splitShop
  • 8 tablespoons butter, melted, divided
  • 1 teaspoon ground mace
  • ½ teaspoon vanilla extract
  • 1 lemon, zested and juiced

Directions

Combine 8 tablespoons of the butter, mace, vanilla, lemon juice, and lemon zest in a small bowl. Keep at room temperature. In a large pot, bring 6 cups of salted water to a boil. Lower the lobsters headfirst into the pot and tightly cover it. Cook for 4 minutes. Remove from the water and cool. Halve the lobsters lengthwise and remove the sand sack just behind the head and vein running down the tail. Crack the claws with the back of a knife, but do not remove the meat. Prepare a large hot fire with the coals in the center of the grill. Brush the cut side of the lobsters with the remaining 4 tablespoons of the butter and place the lobster bodies, two halves at a time, directly over the coals, cut sides down.. Grill for 3 minutes, then use a spatula to flip and place them on the outer part of the grill shell side down. Slather each grilled half lobster with the spiced butter and repeat with the remaining lobsters.

If using a gas grill, preheat half of the burners to low and half to high. Place the lobsters cut side down over high heat and cook for 3 minutes, Flip the lobsters and move them to the medium heat side of the grill to finish cooking.
