Lobster Cakes with “Supreme Sauce”

Ingredients
- 1 pound Maine lobster meat cut into large chunks and drainedShop
- 2 eggs
- 1 lemon, juiced
- 1 tablespoon mayonnaise
- 1 tablespoon Worcestershire sauce
- 1/2 teaspoon Tabasco
- 1/2 teaspoon ground black pepper
- 2 tablespoons Old Bay Seasoning
- 3 green onions, finely chopped
- 1 1/2 cups breadcrumbs
- 1 stick (Maine) unsalted butter
- tablespoons vegetable oil
- Yield: 4-6
Supreme Sauce
- 1/2 cup Honey Mustard
- 1 cup mayonnaise
- 3 tablespoons cocktail sauce or ketchup
- 5 green onions finely chopped
- 3 tablespoons green bell pepper finely chopped
- 3 tablespoons celery, finely chopped
- 4 shakes Tabasco sauce
Directions
In a large bowl combine eggs, lemon, mayonnaise, Worcestershire, Tabasco, pepper, Old Bay, green onions and breadcrumbs, mix well. Fold in lobster. Form into four large or six medium cakes.
In a large skillet, melt butter and oil over medium-high heat. Roll cakes in remaining breadcrumbs and sauté on medium heat for three to five minutes on each side or until golden brown. In a medium bowl, combine all the sauce ingredients, chill and serve with cakes.
