Ingredients
- 4 pounds Maine mussels, scrubbed and debearded Shop
- 10 sprigs fresh oregano and rosemary
- 1 cup wood chips for smoking
- 2 lemons, cut into wedges
- 1 cup white wine
- 4 tablespoons butter, melted for dipping
- Serves: 4
Directions
Heat a wide cast iron pan until screaming hot. Cover the bottom of the pan with the oregano and rosemary. Add a cup of chips to the fire. As soon as the wood begins to smolder, add the mussels and lemon wedges. Cover the pan and continue to cook over high heat until the mussels begin to hiss. Add the wine and season generously with salt. Cover and boil over high heat until the mussels are cooked, 5–7 minutes. Discard any mussels that have not opened. Serve with melted butter.
