Scallop Peanut Satay

Maine Scallop Peanut Satay is one of my favorite recipes and it’s really quick to pull together with basic pantry ingredients. The bright Asian flavors pair so well with the briny sweetness of tender Maine Dayboat scallops.

Ingredients

  • 1 lb Maine Dayboat scallops Shop
  • 2 tablespoons smooth peanut butter
  • 2 tablespoons rice vinegar, divided
  • 1 tablespoon soy sauce
  • 1 tablespoon aji mirin or white wine
  • 1/2 tablespoon grated fresh ginger
  • 1 garlic clove, grated
  • 1⁄4 cup peanut oil
  • Bamboo skewers
  • Maine Sea Salt
  • Serves: 4

Directions

Season the scallops with salt and let them rest for 20 minutes. Whisk together the peanut butter, 1 tablespoon of the rice vinegar, soy sauce,  mirin, ginger, and garlic. Thread 3–4 scallops onto each bamboo skewer. Heat the oil in a large cast iron pan or griddle or outdoor grill over high heat. Add the scallop skewers and cook, without moving, until the scallops develop a dark caramelized crust. Turn off the heat, flip the skewers, and leave in the pan until cooked through.  Drizzle the peanut sauce over the scallops.  Serve on the skewer.
