Lobster Waldorf Salad
Lobster Waldorf Salad is a classic way to enjoy lobster on a summer day. This recipe uses aioli – which is a garlic-mayo.

Ingredients
- 4 (1 ¼ -pound) Maine lobsters, or 1lb of frozen meatShop
- 1 celery heart, thinly sliced
- 1 cup grapes, quartered
- ¾ cup walnut pieces, toasted
- 2 tablespoons chopped fresh tarragon
- ½ cup aioli (or mayonnaise mixed with 1 clove grated garlic)
- Mixed greens for serving, lightly dressed with lemon juice and olive oil
- Serves: 4
Directions
In a large pot, bring 6 cups of salted water to a boil. Lower the lobsters headfirst into the pot and tightly cover the pot. Cook for 7–9 minutes. Remove the lobsters from the water and cool.
Pick the lobster meat, chop the tails and knuckle meat into ½ -inch pieces, and leave the claws
whole. Combine the lobster meat with the celery, grapes, walnuts, tarragon and toss with the aioli. Serve the lobster salad atop the dressed greens.
