Jonah Crab Fettucine
Jonah Crab Fettuccine is a creamy pasta dish featuring smokey notes from bacon, a bit of sultry spice from coriander, the brightness of fresh tarragon and a sweetness from Jonah crabmeat.

Ingredients
- 1 pound Jonah crabmeat Shop
- 1 pound fettuccine
- 3 strips bacon, minced
- 1 onion, diced
- 1 red bell pepper, seeded and finely diced
- 1 teaspoon ground coriander
- 2 cups heavy cream
- 3 tablespoons chopped fresh tarragon or flat-leaf parsley

Directions
Bring a large pot of salted water to a boil and cook the pasta to al dente
following the instructions on the package. While the pasta cooks, sauté the bacon in a large sauté pan over medium heat until it begins to crisp. Add the onion and bell pepper and cook until soft, about 5 minutes. Stir in the coriander and cook for another minute. Add the cream and reduce the heat to a simmer. Reduce the cream by half, then add the crab meat.
When draining pasta, reserve ½ cup of the pasta cooking water. Add the drained pasta, reserved cooking water, and chopped herbs and simmer until the sauce is thick and coats the pasta.
