Grilled Mussels & Clams with Wine

Ingredients

  • 2 pounds Maine musselsShop
  • 2 dozen Maine little neck clamsShop
  • 6 tablespoons butter
  • 1 cup white wine
  • 4 cloves garlic
  • 1-2 shallots
  • ¼ teaspoon red pepper flakes
  • ½ cup parsley, chopped

Directions

Start by making an indirect charcoal fire or preheating your grill to medium-high heat.  Thoroughly rinse and debeard 2 pounds of mussels. If a mussel shell is open, tap it,  if it’s alive, it will close up. If it doesn’t, toss it. Clean 2 dozen little neck clams. 

Place a large disposable foil roasting pan on the grill, and melt 6 tablespoons of butter, add 4 cloves of minced garlic, 1 large minced shallot. Cook covered, add 1 cup of dry white wine and ¼ teaspoon of red pepper flakes, and stir. Now add the mussels and clams. Roast covered for about 8 to 10 minutes or until the mussels and clams open. Served garnished with parsley.
