Clams Grilled with Lemon Chive Butter
Grilled Clams with Lemon-Chive Butter are easy to make, especially if you’re spending time at the grill.

Ingredients
- 24 Little Neck Clams, washed. Discard any that won’t closeShop
- 3 tablespoons of butter
- Juice of one lemon
- 2 tablespoons of chopped fresh chives
- Tabasco sauce
- Freshly ground black pepper

Directions
Set the clams on the hottest part of the grill and cook until the shells begin to pop open.
For the lemon butter, combine the butter, chives, and lemon juice in a
small saucepan. Season to taste with Tabasco and a little black pepper.
Set the pan on a low-heat area of the grill to warm it, whisking constantly
so that the butter remains creamy. As the clams open, remove them from the grill and drizzle a little of the melted butter into each shell. Discard any clams that haven’t opened after 7 minutes. Serve immediately.
