Ingredients

  • 4 pounds Maine mussels, scrubbed and debearded (discard any that won’t close)Shop
  • 1/4 cup extra-virgin olive oil
  • 3 cloves garlic, crushed
  • 1 1/2 cups white wine
  • 1/4 cup whole-grain mustard
  • Maine Sea Salt
  • 1 bunch scallions, sliced
  • 1 loaf crusty bread
  • Serves: 4, Main Course

Directions

Heat the olive oil in a large pot over high heat. Add the garlic and cook until it begins to brown. Add the mussels and wait a few minutes until you begin to see some of the shells open. Add the wine and mustard and season the liquid with a good pinch of salt. Cover the pot and cook to allow all the shells to open, about 7 minutes. If any are not open, cover and cook for another few minutes before removing the pan from the heat. Discard any mussels that haven’t opened at this point. Add the scallions and toss to combine. Serve with crusty bread.
